Raw Chocolate Truffle "Butter"
This spread is simple, delicious, light and fluffy.  I made it originally to be a candy-like truffle, but the consistently lends itself to a nice light spread for toast or cakes or even a pudding.

Ingredients:
3 small or 2 medium/ large ripe bananas
1/2 Cup macadamia nuts (ground fine)
1 Tb. cocoa powder
2 Tb. ground flax seed
pinch of salt

Directions:
*  Process bananas into a puree in the food processor
*  Add all other ingredients
*  Refrigerate or freeze and use as spread or raw ice cream/ pudding


Raw Key Lime Pie
This pie is delightful and refreshing for a summer evening.  The more lime, the better in my oppinion, so experiment and see what you like.

Ingredients: 
2 C avocado
1/2 C agave nectar
2 tsp. coconut oil
3-5 Tb. lime juice (preferably key limes, but I used Tahitian limes)
1 tsp. vanilla
Crust:
2 C ground almonds
12 dates- soaked and drained
1/2 C flaked coconut
Directions: 
1)  Pulse all crust ingredients together in a food processor or blender.
2)  Press blended crust into a 7-9" pie pan
3)  Puree avocado in food processor until smooth and silky.
4)  Add all other wet ingredients, and puree until incorporated.
5)  Pour filling into prepared crust and place pie in the freezer for 30 minutes or up to 24 hours until ready to serve.
Banana Orange Recovery Smoothie
This smoothie made my morning after a long 20 mile run in the heat.  It hits the spot when you can't handle solid food after a hot run, and gives your body the essential sugars, protein and vitamins it needs to recover.
Ingredients:
2-4 Tb. hemp seeds
1/2 C water
1 large or 2 small bananas
1 tangerine or 1/2 orange
4 ice cubes
1-3 Tb. almond butter
2 tsp. hemp protein
1-3 tsp. agave nectar
Directions:
1)  Blend hemp seeds and water together to make a hemp milk base (yum, the base of all my smoothies)
2)  Add all other ingredients and blend until smooth.
3)  Adjust agave nectar to taste and enjoy.


Easy Oat Milk

I love making home-made nut or grain milks; they are so simple to make, reduce unnecessary waste of store bought vegan milks, and are fresh and tasty!  I have many favorites, but this is one of my staples.


Ingredients:
1/2 Cup steel cut oats
1/2 Cup cooked or sprouted Quinoa*
3 dates
4 Cups water

Directions:  
1)  Place all ingredients in a blender and leave to soak for 8-12 hours or overnight
2)  Blend ingredients on highest setting for about 2-3 minutes
3)  Strain through a cheesecloth

Enjoy!  Add vanilla or agave nectar or a pinch of salt to taste.
*I've done this without pre-cooking or sprouting as well, and taste is still uncomprimised
